More Veggies, Less Salad

Dips. Tzatziki is a refreshing, creamy Greek dip with bright notes of lemon and herbs that pairs best with cherry tomatoes, broccoli, carrots, cucumbers or just a spoon (but we are trying to get our veggies, so let’s focus). Hummus is a great option for extra protein.

Soups. This is a great option if you have some picky eaters in the house that make it hard for you to stick with your diet. Hide squash, cauliflower and peppers under the veil of a velvety soup. Add coconut milk for added creaminess and top with roasted chickpeas, beet chips or avocado for added servings.

Buddha Bowls. Start with your favorite grain (think rice or quinoa) and add your favorite roasted veggies (think sweet potatoes, mushrooms and brussel sprouts). Pick a protein and top with any sauce that fits your vibe.
